sorry, I can't tell you any specifics of what is preinstalled on the O2 exec.
For skype you can download this directly from the
skype web site.
Unfortunately I don't know of any free PDF viewers and definitly symbian programs won't work on windows mobile devices

this PDF chart O2 call this the XDA mini PRO, not just XDA mini as mentioned at the top of your post whereas the original JAM variant was called XDA II mini by O2
